Bitter melon is a favorite in Asian and Southeast Asian cooking. It can be stuffed with pork or shrimp and steamed or pickled or curried and served with meat or in soup.
Bitter melons are—as their name suggests–a bitter and mouth-puckering acquired taste—something like the acquired taste of a grapefruit or very dark chocolate.
The bitter melon is a member of the Cucurbitaceae family, which includes squash, watermelon, muskmelon, and cucumbers. Bitter melon can be grown much like cucumbers or cantaloupes but they are a subtropical plant and require at least three to four months of warm to hot and humid weather to mature.
Bitter melon is a vining plant. It has deeply lobed leaves and grows in a fashion similar to squash, cucumbers, and watermelon producing vines 13 to 16 feet long if left unpruned.
Fruits are oblong and either smooth or warty, usually about 8 inches (20 cm) long but fruits can vary in length between 2 and 10 inches (5-25 cm) long. The fruit shifts in color from green to yellow to orange as it ripens and over-ripens. The flesh has a watery, crunchy texture, similar to a cucumber.

Winter melon is a large fruit grown in warm climates that can grow beyond 1 foot long and weigh more than 40 pounds. It resembles a large watermelon with its oblong shape and dark-green, waxy skin. Unlike a watermelon, the inside of the flesh and seeds are white, it is tasteless, and it …

What It Looks Like. Winter melon is a large fruit grown in warm climates that can grow beyond one foot long and weigh over 40 pounds. It resembles a large watermelon with its oblong shape and dark-green, waxy skin.
Winter melon plants grow as a vine and produce fruits that look very similar to squashes. The vine and its leaves also look much alike to those of squashes. For some varieties, during the growth stage, a soft fur covers the skin of the winter melon. Later on, when the fruit reaches its maturity, this hair falls off, and a waxy
Winter melons are annual plants, which means you have to plant it every year to get new crops. The name “winter melon” may mislead many gardeners who try to grow this plant for the first time. It was named this way because you can store it for a long time after harvesting and because we can enjoy it even during winter.
Also known as: fuzzy squash and hairy gourd
hairy gourd, fuzzy squash, and hairy cucumber. It is a type of edible wax gourd that is harvested when it is young, about one week after it blossoms
If left on the vine to mature, the fuzzy exterior disappears and it becomes known as winter melon. The skin is a blotchy green with fine white hairs that create the fuzzy texture, similar to a kiwi, and the interior flesh is white and has a mild taste.
